醉于棕榈酒——忆加纳(二十四)

伐倒棕榈树,砍掉树叶,在树干两端开洞,用长棍将树心捣烂,析出棕榈汁液,然后密封开口处,点燃篝火,将树干放置其上加热,第二天,从一端打开,收获一种淡黄色的液体,喝上一杯,酸酸的,有一股清香,哦,好醇的棕榈酒,不由得笑了起来。

好啊,原来是一场梦!梦中回到加纳,又一次亲历了自制棕榈酒的情景,舌尖酒香依旧缭绕。记得当时在Adam的带领下去他的一个朋友家里做客,主人特地现场制作棕榈酒。新鲜的棕榈汁需要经过一天左右的发酵才能成酒,所以当时喝的是昨天酿造好的酒。棕榈酒的味道酸酸的,酒味不大,但很爽口,咕咚咕咚几口就喝了一大杯。喝的时候没什么感觉,就像果汁一样,可是过了大约一个小时,才发现它的酒劲儿真不小,让人感觉头晕脑胀,堪比红酒。

这种杀鸡取卵的制酒方法并不科学,需要伐倒树木,没有可持续性。还好这里棕榈树随处可见,否则后果可想而知!比较科学的制酒方法如下:选取粗壮的棕榈树,在恰当的地方凿洞,用树皮或树枝削成的引导槽将树液引到悬挂在树上的容器里,接满后密封经过几个小时自然发酵就可以饮用了。

据当地人说喝棕榈酒有保健作用,所以不时会喝上一杯,渐渐地居然喜爱上了这种酒,后来每周都要小酌几次。这是加纳的味道,热带的味道,也是悠闲的味道,更是生活的味道。

Taking a drink, it is sour with a kind of faint scent. Oh, how mellow the palm wine is, ha-ha. 


Hooray, it is just a dream! In the dream I came back to Ghana again to experience making the self-made palm wine, the scent of the wine was all the same in my tongue tip. I remembered that once the driver Adam brought me to visit his friend, who made the wine for us on the spot just like that. The fresh palm juice was a little bit sweet without any alcohol until it was left alone for several hours for fermentation. So what we drank was made the day before that day. The palm wine was a little bit sour, slightly winy, and very fresh and I devour a big cup of it instantly. It is ok while drinking but after roughly an hour I began to feel tipsy and swirling. It was considerably strong just like red wine 

The Ghanaian method of making palm wine is unscientific just like killing the goose that lays golden eggs. It is unsustainable because the tree must be laid down. Luckily there are plenty of palm trees there; otherwise the consequence would be disastrous! The more scientific method is like this: select a strong and thick tree and make a hole at a proper place, drain the sap out with the guide grove made of bark or branch to a container hanging on the tree, seal the container after the sap is full for several hours for fermentation, and then the palm wine is done.

According to the locals palm wine is healthful for the human body, so I would drink some once in a while and gradually I fell in love with it and later would drink it several times a week. It is the taste of Ghana, taste of tropics, also the taste of leisure, and definitely it is the taste of life.
